Vegan French Toast

Are you ready to have the most incredible French toast you’ve ever had in your life?! Well, have I got a recipe for you!! Yea, the whole dairy milk and eggs thing is okay, but THIS recipe, is melt in your mouth, change the game, sensationally delicious. I dare you to find a more moist recipe, with it without eggs. The secret? Flax and apple sauce! Combine those with the sweetness of coconut oil and you have yourself a winner!!!

Recipe

  • 1/2 cup unsweetened applesauce
  • 1/2 cup milk (i use coconut or almond, vanilla flavored for an extra hit of vanilla, oat milk for an extra creaminess)
  • 1 tablespoon flax seed meal
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 6 thick brioche bread slices, either stale or toasted (I’ve used a left over, day-old baguette before and it was also quite tasty)
  • A few drops of butter or coconut oil as needed
  1. In a bowl or wide dish, mix together all ingredients except bread and oil.
  2. Heat a griddle at medium-high. Once hot, add the butter or oil.
  3. Dip bread into the mix gently on both sides. Spread with spatula to ensure an even layer of mix on each side. Coat entire piece of bread, including the crust. Note: Do not drench it in the mix, it will become soggy and fall apart.
  4. Place the coated bread slices on the griddle, heating both sides until golden brown.
  5. Remove from heat
  6. Sprinkle with powdered sugar, top with fruit, walnuts or whatever you wish! Serve hot!! and enjoy!! 🙂
  7. Note: This can also be enjoyed with a little drizzle of maple syrup and butter, but I’ve honestly never had a need for it. The flax/applesauce combo makes these babies so incredibly moist that each morsel melts in your mouth when served hot anyway. See some yummy variations below 🙂 ( I clearly make these a lot)
